The Bristol Shop - Staff

The Bristol Shop is run by a small dedicated team. We have recruited local young people of graduate calibre and trained them up in working front of house. Manufactured products such as sausages and pies are produced in our sister shop in Newport.

A critical part of our business is the staff, responsible for giving expert knowledge on cuts, cooking advice and preparation of the meat you require. Of course there is a lot more that goes on behind the scenes in terms of sourcing and maintaining the meat and poultry in prime condition.

Peter Molesworth (Owner)

Since qualifying from Newcastle University in Agriculture and after an initial spell in the army, I have held many jobs in the agricultural sector including managing a large scale organic mixed farm, crop processing and agronomy. When a traditional butchers came up for sale in Newport, Gwent twelve years ago, I snapped it up and learnt the techniques for producing a wide range of goods. In 2009 a business nearer to home in Henleaze, Bristol came up and with the help of Graham (below) we transferred some of the technologies from Newport and expanded the business and developed our reputation. When not working, my interests are all outdoors: shooting, sailing and skiing and of course cooking.

Graham Symes (Manager)

Graham had worked with me in developing another shop in Bristol some time ago and so was a natural choice to run the Bristol Business. Graham is a skilled “Old School” butcher, having undergone a formal apprenticeship in the early seventies and trained at Smithfield. Having run numerous high class establishments in London these craft skills have been used to benefit customers in the Bristol area.
